Coconut Lime Agua Fresca

Ingredients
  

  • 2 cups coconut water chilled
  • 1 cup coconut milk well shaken
  • 1 cup cold water
  • 1/4 cup fresh lime juice
  • 1 teaspoon lime zest
  • 2 to 3 tablespoons sugar honey, agave, or maple syrup
  • 2 cups ice for serving
  • Lime slices for garnish
  • Fresh mint optional for garnish
  • Shredded coconut optional for garnish

Instructions
 

  • Add the coconut water, coconut milk, cold water, fresh lime juice, lime zest, and sweetener to a blender.
  • Blend for 30 to 45 seconds, or until smooth and creamy.
  • Taste and adjust the flavor with more lime juice for tartness or more sweetener for sweetness.
  • Strain through a fine mesh sieve if you prefer a smoother, lighter drink.
  • Fill glasses with ice.
  • Pour the coconut lime agua fresca over the ice.
  • Garnish with lime slices, fresh mint, or shredded coconut if desired.
  • Serve immediately while cold.

Notes

Use fresh lime juice for the brightest flavor.
Shake or stir the coconut milk well before measuring because it may separate.
Full-fat coconut milk creates a creamier drink, while light coconut milk makes it thinner and more refreshing.
Do not add too much lime zest because it can taste bitter.
Stir or shake before serving if the drink separates in the refrigerator.
Store leftovers in a covered pitcher or jar in the refrigerator for up to 2 days.
Add ice only when serving so the drink does not become diluted.
For a tropical variation, add 1/2 cup pineapple juice.
For a fresher flavor, blend in a few mint leaves or cucumber slices.
For make-ahead prep, blend the agua fresca and chill it without ice until ready to serve.
