If using wooden skewers, soak them in water for at least 30 minutes before grilling.
Place the chicken pieces in a large bowl or resealable bag.
In a separate bowl, whisk together the honey, lime juice, lime zest, olive oil, garlic, soy sauce, cumin, smoked paprika, salt, and black pepper.
Pour the marinade over the chicken and toss until all pieces are evenly coated.
Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
Preheat the grill or grill pan to medium-high heat and lightly oil the grates.
Grill the skewers for 10 to 12 minutes, turning every few minutes, until the chicken is golden, lightly charred, and cooked through.
Remove from the grill and let the skewers rest for 3 minutes.
Garnish with chopped cilantro and serve with lime wedges.
