Grilled Honey Lime Chicken Skewers

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • * 1/4 cup honey
  • * 3 tablespoons fresh lime juice
  • * 1 teaspoon lime zest
  • * 2 tablespoons olive oil
  • * 3 cloves garlic minced
  • * 2 tablespoons soy sauce
  • * 1 teaspoon ground cumin
  • * 1 teaspoon smoked paprika
  • * 1/2 teaspoon salt
  • * 1/4 teaspoon black pepper
  • * 2 tablespoons fresh cilantro chopped
  • * Lime wedges for serving
  • * Wooden or metal skewers

Instructions
 

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  • Place the chicken pieces in a large bowl or resealable bag.
  • In a separate bowl, whisk together the honey, lime juice, lime zest, olive oil, garlic, soy sauce, cumin, smoked paprika, salt, and black pepper.
  • Pour the marinade over the chicken and toss until all pieces are evenly coated.
  • Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
  • Preheat the grill or grill pan to medium-high heat and lightly oil the grates.
  • Grill the skewers for 10 to 12 minutes, turning every few minutes, until the chicken is golden, lightly charred, and cooked through.
  • Remove from the grill and let the skewers rest for 3 minutes.
  • Garnish with chopped cilantro and serve with lime wedges.

Notes

* Chicken thighs can be used instead of chicken breasts for a juicier texture.
* For a gluten-free version, use tamari instead of soy sauce.
* Do not marinate the chicken for longer than 4 hours because the lime juice can affect the texture.
* Keep the grill at medium-high heat so the honey caramelizes without burning.
* Add bell peppers, red onion, or zucchini between the chicken pieces for a colorful variation.
* Store leftovers in an airtight container in the refrigerator for up to 3 days.
* Reheat gently in a skillet, oven, or microwave until warmed through.
* The chicken can be marinated ahead of time and refrigerated until ready to grill.
