Add the cubed watermelon to a blender.
Pour in the cold water and fresh lime juice.
Add 1 tablespoon of sugar, honey, or agave if the watermelon needs extra sweetness.

Taste and adjust with more lime juice or sweetener if needed.
Strain the mixture through a fine mesh sieve if you prefer a smoother drink.
Pour the agua fresca into glasses over ice.
Garnish with fresh mint leaves and lime slices, then serve cold.
* Use ripe, sweet watermelon for the best flavor.
* If the watermelon is very sweet, you may not need any added sweetener.
* Start with less water and add more if you prefer a thinner drink.
* Strain the drink for a smoother texture, or leave it unstrained for more fruit body.
* For a variation, blend in strawberries, cucumber, pineapple, or fresh mint.
* Add sparkling water just before serving for a fizzy version.
* Store leftovers in a covered pitcher or jar in the refrigerator for up to 2 days.
* Stir well before serving because natural separation may occur.
* This drink can be made a few hours ahead and chilled until ready to serve.
* Freeze leftovers in ice cube trays and blend later for a slushy drink.
