Ingredients
  

  • * 4 cups seedless watermelon cubed
  • * 2 cups cucumber sliced or diced
  • * 1/4 cup red onion thinly sliced
  • * 1/2 cup feta cheese crumbled
  • * 2 tablespoons fresh mint chopped
  • * 2 tablespoons olive oil
  • * 1 tablespoon fresh lime juice
  • * 1 teaspoon honey
  • * 1/4 teaspoon salt
  • * 1/4 teaspoon black pepper

Instructions
 

  • Add the watermelon, cucumber, red onion, feta cheese, and fresh mint to a large bowl.
  • In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper.
  • Pour the dressing over the salad.
  • Toss gently to combine without breaking the watermelon.
  • Taste and adjust with more lime juice, salt, or mint if needed.
  • Serve immediately or chill for 10 to 15 minutes before serving.

* Use seedless watermelon for the easiest preparation.
